Roast Chicken with Butternut Squash, Harrisa Black Cumin Honey Roasted Rainbow Carrots, Asparagus and Yorkshire Puddings

This is delicious festive treat with a twist: bursting with spice, packed with flavors, and infused with goodness for the brain. I roasted chicken with nothing more than oil, sea salt and pepper seasoning, and a few sprigs of rosemary. Instead of potatoes I opted for making mash with butternut squash with smoked paprika and turmeric.  The rainbow carrots  are marinated with hairssa, black cumin seeds, olive oil and honey. It’s all topped off with a cilantro oil dressing and sriracha yogurt. 

  • The butternut squash is seasoned with turmeric (which can boost memory, and protect the brain from inflammation and oxidative damage) and smoked paprika.
  • The carrots and butternut squash are rich in caretenoids, antioxidants that protect the brain from free radical damage.
  • Asparagus is rich in B-complex vitamins and folic acid needed for a health nervous system.
